Jewellery Quarter’s very own, The Wilderness, will trial a plant-based menu after being inundated with enquires during Veganuary. It is set to hold two vegan nights offering never-before-seen food on its menu.
The rock and roll, fine dining eatery will revisit previous vegan ideas but has promised new dishes too.
Head chef and Wilderness owner, Alex Claridge, is renowned for serving playful and provocative food within multi-course menus, based on seasonal and wild produce.
He appeared on BBC’s Great British Menu where the nation’s top chefs compete on TV for the chance to cook at a four-course banquet.
Announcing the two vegan nights, the Michelin-guide restaurant wrote on Twitter: “Have never had more vegan enquiries than this Jan / Veganuary. It’s very important we remain a contemporary and modern restaurant.
“The people have spoken. We will be running a trial of a vegan menu at two (count ‘em) vegan nights. Looking for willing guinea pigs. No slander intended.
The Wilderness, based on Warstone Lane, added the events will be a chance for chefs to explore, and share, “ideas of how our food could exist through a plant-based lens” – hinting some dishes may be rolled out permanently.
